Quick, Easy, Healthy Gluten-Free Recipes

Most of us are more health conscience than ever.

Some of us have allergies and food sensitivities.

Many of us have hectic life styles,
and very little time to prepare hearty tasty meals.

We crave quick solutions to good healthy
eating.... but more importantly good tasting, yummy,
appetizing meals, economical, quick and easy to prepare*.

Voila! La Solution.....
My Daughter and I love to cook and entertain,
we have developed and tested some great
recipes that we are happy to share with you and
help make your life a little easier and healthier too.

Sublime French Onion Soup

Our first great recipe is an easy 'sublime starter' or a meal in a bowl. My future daughter in law Lori and I prepared this hearty French Canadian traditional soup, on a chilly fall day up at the cottage, while the men were out chopping wood to stoke the wood cook stove.

'French Onion Soup'

Makes 4 servings.
Ingredience are:
- 1 1/2 pounds (675 g) onions, thinly sliced
- 2 tablespoons (30 ml) vegetable oil (or butter for some)
- 1 tablespoon (15ml) Cognac
- 1/2 cup (125 ml) red wine
- 3 cups (750 ml) 'SuperSoy' Onion Broth

Salt & pepper
-
4 nan bread croutes, or if you can afford to cheat, add 4 thickly sliced french bread for garnish
-
Grate gruyere cheese for garnish or Slice tomatoe (optional)
sprinkle fine herbs
- 'SuperSoy' (Ground Beef) Alternative (optional add in for a Meal in a Bowl)*

1. Melt the butter or substitute with vegetable oil, and saute the onions until very soft,
at least 20 min. Add the Cognac and the wine, simmer for one minute.
* Optional Meal in a Bowl alternative:
Add the 'SuperSoy' (Ground Beef) at this time, brown lightly |
then Add the broth, and Simmer, covered, 45 minutes.
2. Check the seasonings. Ladle into ovenproof soup bowls and set on a baking sheet.
Top each with a nan bread croute. Sprinkle the top generously with cheese, or a tomato
slice topped with fine herbs mix.
3. Broil until the top is lightly brown, about 2 minutes.... and voila a yummy healthy soup.
